Since the poster qualified that the target for this term was the UK, this information is a bit of a non sequitur. And isn't Chicago + Manual of Style a contradiction in terms?

Following the Chicago Manual of Style, in US English, neither of these responses would be capitalized.

For the UK, your own suggestion is perfectly correct.

I assume the word undergraduate, in itself, gives the idea of being close to getting the Degree
