Mutton Soup

According to Cultural Guide to Russia, Русско-английский культурологический словарь(М. 2002) it is "Kharcho. A mutton soup; very spicy. Very popular in the Caucasus region. A Caucasian dish.

agree Yakov Tomara : In Russia "kharcho" usually stands for spicy mutton soup with rice. Perhaps the original Georgian recipe was distorted, it's quite probable :-)

Description
Kharcho is Caucasian dish, hot soup with beef and rice. The special and unusual taste is reached by tkemali, sauce made from plums.

Method
Slice the beef and cook with bones in cold water until half done. Heat tomato paste in fat. Add well washed rice, chopped onion, fried tomato paste, ground garlic and cook on law heat for 40 minutes. Add tkemali or vinegar at the end. Serve with parsley, cilantro or mint.

Ingredients
500 g beef chuck.
100 g bones.
150 g rice.
50 g fat.
10 g garlic.
50 g tomato paste.
50 g tkemali (hot plum sauce).
or 30 g wine vinegar.
150 g onion.

There are many, many \"foreign\" dishes that keep their name - spaghetti, chow mein, pirogi, taco, etc., etc.. I wouldn\'t be afraid to use \"kharcho\" (there are several hundred hits in Google) with perhaps a parenthetical brief explanation. As a translator, remember every word does not have an equivalent in another language and it\'s a waste of time to try to find one. Use the original and explain it, if necessary.

I\'m from Georgia, too, Georgia, USA that is! Never heard of kharcho here, but if we had that dish we would make it out of road-kill opposum, plentiful and tasty (if the vultures didn\'t get to them first!)

Многие считают, что для харчо необходима баранина. Это нелепое заблуждение, что ясно даже из самого названия. Харчо - суп не из баранины, а из говядины. Название харчо на грузинском языке - дзерохис хорци харшот - означает именно говяжий суп. Собственно говоря, кто их знает, эти грузинские названия? Так и пишут до сих пор в наших меню: чахохбили из курицы, чахохбили из утки, а \"чахох\" по-грузински - фазан. Это же все равно, что писать \"яичница из репы\". Да, мы не знаем грузинскую кухню, но она всегда была нам интересна

Spicy Georgian Kharcho Soup with Walnut

Классически он готовится из говяжьей грудинки, иногда из курицы.

Вот борщ, например, это свиной суп, говяжий, куриный или постный?? По-моему, главная очличительная черта борща - присутствие свеклы и капусты, а остальные компоненты - уж как Бог пошлет.

Так и СУП харчо. Вкус ему придает особый набор специй - кориандр, уцхо-сунели, харчо-сунели и чеснок. По большому счету, и на орехах можно съэкономить, хотя я лично не советую. Туда не так уж и много идет орехов (в отличие от ХАРЧО - густого мясного соуса с большим количеством орехов, который едят с кукурузной мамалыгой). Что касается бульона-основы, классический варится из говядины, хотя, если в пост захотелось вкусненького, можно и суррогат-какой изобразить.
Кроме того в супе-харчо притствует рис, но его можно заменить мелкой вермишелью.
