Es un plato típico británico cuyo nombre se podría dejar sin traducir (al igual en inglés que no se traduce "paella" u otros muchos platos de la cocina internacional), pero mencionando los ingredientes entre paréntesis.
Las definiciones del diccionario Oxford son las siguientes:
OED:
bubble and squeak: cooked cabbage fried with cooked potatoes and often meat.
Oxf. Inglés-Español:
bubble and squeak: plato de repollo y patatas
Puesto que tu traducción menciona que es un plato vegetariano, obviamente no lleva carne en este caso.
