Made as follws:

Si us agrada l'all podeu atrevir-vos amb l'anomenada allada. Només necessiteu coure a la brasa dues cabeces d'all mentre piqueu cinc grans d'all cru i els barregeu amb molla de pa, dues pessigades d'espècies dolces (canyella, nou moscada i gingebre) i un gotet de brou de verdura tebi. Després heu de barrejar-ho tot amb la batedora i afegir-hi l'all rostit (i pelat) per fer-ne un triturat ben fi. Serviu la barreja calenta i saleu-la al final.

"allada" (garlic base sauce)

I would like it untranslated. In my experience "agliata" (italian origin) and "allada" (catalan) are common in the cuisine jargon. I would give a small description in parenthesis calling it a "base sauce" because it is used as a base in several recipes (chicken, fish and many more).
Each region changes the recipe a bit. Some add bread crumbs and nuts for example.
