This is the title of one of the subjects studied - this is for a Lycee course, possibly during the later years of Lycee judging by student's photograph.

Lycee is "Jean-Henri Fabre" in Carpentras.

@ Melanie - Independently, I found the same site as Melanie, and then proceeded to see what 'capstone project' means (education was simpler and more down-to-earth in my day ;-) ). I concur with her proposal and suggest she enter it as an answer.

For lack of any sort of official translation, how about something like 'capstone' or 'capstone project'? That's what this sounds like to me, anyway.

I've inserted the missing accent to make an online search easier.

Never having heard of a 'capstone' project, I can only add that, for us (great-grand-) parents in some countries like Austria for A-Levels (Matura) or Germany (Abitur), the compulsory paper is called a 'Scientific Assignment'.

At university undergrad or postgrad level, it is called an 'extended dissertation' e.g. upgrading a(n) historically questionable English Bar Exam 'Degree' to an LLM.
Example sentence:
