I think it probably means flushing with wine

There is an explanation here:

I understand that 'avinage' is part of the process, but not necessarily the actual method.
Note from asker:
Avinage is a method of getting the product into the bottle, as is insufflage -- I'm not sure you've understood that.
I apologise, as in fact it is unclear whether avinage/insufflage refers to an either/or option or two seprate procedures. Maybe only insufflage refers to the filling part of the process. Will post any feedback from end client.

Avinage: se pratique avec un fluide liquide recyclé : alcool, produit embouteillé. La bouteille est prise par le col, retournée au-dessus de la buse d'injection, avinée puis égouttée avant de passer devant l'aspiration goutte (pour laisser la paroi extérieurement sèche) lors du retournement de sortie.
Insufflage: réalisé avec un fluide gazeux : air filtré, air traité. La bouteille est prise par le col, retournée au-dessus de la buse d'injection. Une aspiration permanente de l'air vicié présent dans les bouteilles est réalisée avant, pendant et après la phase d'injection d'air.
La bouteille peut également subir un traitement d'air ionisé
