I've got "affinage" as maturing (which I don't particularly like, but that's another issue) and "nurturing" for "élevage" - maybe involves giving the wine an oak flavour, etc.
Any ideas?

Maybe you could use 'maturing' for '�levage' (most comparable to cattle-reraing!), and save 'ageing' for 'affinage' (cf. cheeses, and the fact that it is sometimes described as 'oak-aged'...) ?
