Another way to think of the difficulty levels is this: an easy question is one that deals with everyday conversation. A pro question is anything else.
When deciding between easy and pro, err on the side of pro. Most questions will be pro.
* Note: non-member askers are not given the option of entering 'pro' questions; the only way for their questions to be classified as 'pro' is for a ProZ.com member or members to re-classify it.

You say you are having trouble with the last sentence, that you don't know what the "mentions" are.
We can stab a guess as to how to turn the phrase, but without any certainty. However, we cannot hope to even stab a guess at what the "mentions" are as your own original says they follow and we don't have the text that follows!
(Had it been the preceding "mentions", it would have probably been in reference to "certificat bio" and "licence bio". Those precede, they do not follow, so that's a non-starter!)
