Hi,

The context is a revetement anti-adhésive of kitchen utensils

"Ces revêtements présentent une meilleure résistance à l’abrasion, ce qui est un gage d’une plus grande durabilité au niveau de la tenue aux arêtes."

I’m stuck on « au niveau de la tenue aux arêtes », Ive used « ridges » for « arêtes »

Imagine a Teflon coated kitchen tool with sharp(ish) edges all over it. Where does the Teflon wear off first? If we assume that the bonding is perfect, then the high abrasion resistance of this particular product gives it good performance (ie it doesn't wear off) at the edges and ridges.

which is a measure of the coating having greater durability on the ridges.

I agree with the other answer as far as core meaning, but I think I would put it something like this.

bonding

Here the meaning is literally "holding", ie adhesive bonding. Coatings on sharp edges (arêtes) are usually the first to fail since the stress is highest here.

See comment above. This bonding answer is not quite right. Rather, "tenue" as in performance. "Niveau" is just FR padding.
