critical point for liability release
Hello,
I think they mean that once this "critical point" is fulfilled by the producer, he can no longer be held legally liable in that regard.
Example:
1) One critical point : producer is not to use any dangerous pesticides
2) Producer complies and doesn't use any dangerous pesticides.
3) In doing so, he can't be held liable if anyone becomes ill with pesticide-causing illnesses from eating his produce
I believe that's what they're saying here.
I hope this helps.

check discussions of ISO 22000 (contrôles libératoires, analyses, les produits sont "libérés", nouvelle méthde HACCP libératoire, etc.) and look for English counterparts. These are critical control points for releasing products (on to the next step? to the consumer? to the market?) HTH
