Dutch to English Tech/Engineering Agriculture
"Het duurt zeven tot vijftien jaar om een nieuw gewas te ontwikkelen voor de markt. Je moet een aantal seizoenen uitzaaien, selecteren, zaad afnemen, weer uitzaaien, enzovoort."

Bedoelt men zaad uit de plantjes halen? En zo ja, hoe zeg je dat het beste in het Engels? Having a brain block here...

Yes - I suspect this is about plant breeding (plantenveredeling)
Example sentence:

seed harvesting

The more professional term is seed harvesting. The term seed collection, in scientific terms, could mean gathering different specimens of seeds for a seed bank (see the first reference below). Seed harvesting is a generic term which would include hand-harvesting methods such as bagging and mechanical harvesting methods, including stripping. Your source seems to be targeted for a lay readership (e.g. gardening enthusiasts) in which case collecting would probably be OK.
